The season of celebration calls for something sparkling, the sort that stops just short of tickling your nose. And while Champagne certainly owns New Year’s Eve, you can’t subsist on that kind of bubbly the entire holiday season without diluting the experience. That’s where the gin fizz comes in, snatched straight from summer, it’s a take on a new kind of bubbly. Light and refreshing, the effervescence and hints of citrus cut right through the richness of winter. For the casual times between now and when the countdown starts, consider it an easy departure from the old stand bys.
2 oz gin
1 oz fresh lemon juice
1 tsp superfine sugar
Sparkling water or seltzer
Combine all ingredients except sparkling water in a cocktail shaker filled with ice. Shake well and strain over ice into a chilled highball glass. Top with sparkling water and stir gently.
