Ahhhhh…..Miso Cod…One of the tastiest things in life! Such a fancy schmancy dish, with very little effort to prepare. I’d say that’s a pretty darn good combination. Wouldn’t you? Basically you are taking some flaky white fish and glazing with some authentic Japanese flavors that will make you want to lick your fork over and over again. I’m not kidding.
- 2 tablespoons of Japanese sweet Mirin sauce (it is a sweet sake and I like the Kimono brand)
- 2 tablespoons low-sodium soy sauce
- 1 tablespoons hot water
- 4 tablespoons miso (soybean paste) I got this at Graces, but they may have it at Fairway, Whole foods or any other specialty store)
- 4 (6-ounce) cod fillets
Heat a large sprayed skillet medium-high.
Combine first four ingredients, stirring with a whisk. Baste over cod.
Place fish skin side down and cook for about 4-5 minutes. Flip and baste again with miso mixture and cook another 4-5 minutes until the fish is fully set in the middle.
Pro Tip: If cod is on the thicker side, place in a heated oven to set the middle until fully cooked after searing in the skillet
