Ayara Thai Wings Recipe

Chef Vanda Asaphu of Ayara Thai Cuisine honed his cooking skills helping his mother make large batches of food to feed their family of eight. His Thai wings recipe is so good, you certainly won’t want to share with a group that large.

Ayara Thai Wings

Recipe by Chef Vanda Asaphu of Ayara Thai Cuisine
Serves 4-6

Ingredients

4 oz. (1/2 bottle) of Ayara’s BBQ Sauce
1 package of chicken wings
2 stems of fresh lemongrass, chopped
1 large ginger, peeled and chopped
1 head of fresh garlic, peeled
3 tbsp. chopped fresh cilantro roots/stems (no leaves)
3 tbsp. black peppercorn
1 can coconut milk
2 tbsp. of turmeric powder
2 tbsp. of curry powder
1 tbsp. sugar
2 tbsp. fish sauce

Instructions

Mix the lemongrass, ginger, garlic, cilantro root/stems and black peppercorn in a blender until coarsely blended.

In a large bowl, rub chicken wings in the mix blend, coconut milk, turmeric powder, curry powder, sugar, and fish sauce. Massage the mixture for 3-5 minutes with tender love. Cover and let marinate for 24 hours.

Preheat oven at 275 degrees Fahrenheit.

Cut each half of the chicken into 3 pieces (6 pieces total). Transfer chicken onto a roasting pan and bake for 15 minutes.

Preheat the BBQ grill.

Throw chicken wings on grill at low flame (to avoid burning) – cook for approximately 10 minutes until done.

Serve with BBQ sauce.
