Celebrity caterer Andrea Correale prepares red-carpet-worthy mini parfaits with rich guacamole, pico de gallo, tortilla strips and low-fat cheddar cheese. Layer the ingredients into votive glasses for the perfect single serving. The best part is there is no need to share.
Mini Guacamole Parfait
4 ripe Hass avocados
3 tbsp of lime juice
8 dashes of hot sauce
½ cup small diced red onion
1 tsp kosher salt
1 tsp ground black pepper
Pico de gallo:
4 plum tomatoes, seeded and chopped
1 jalapeño, seeded and finely chopped
½ white onion, finely chopped
¼ cup cilantro, roughly chopped
1 tbsp of lime juice
Salt and pepper
Whole wheat, or healthy tortilla strips
Low-fat cheddar cheese
For the guacamole:
Cut avocados in half, remove the pit and scoop into large bowl.
Add hot sauce, lime juice, onion, salt and pepper and toss well.
Mash with a fork until all ingredients are mixed together.
Mix well and taste for salt and pepper.
For the pico de gallo:
Combine all ingredients until mixed well.
Parfaits can be served in votive glasses or plastic cups for kids. Layer the guacamole and pico de gallo in vessel and top with low fat cheddar cheese and whole wheat tortilla strips.
