
Your Memorial Day Weekend just got even better, and not because your boss gave you a half day on Friday. The management teams behind Mexican sensation Mesita and gastropub Parlay in Rockville Center have created a new waterfront dining destination. SALT, a seasonal American restaurant in Merrick, will open Memorial Day Weekend in the building vacated by The Boathouse. Whether you arrive by land or sea, SALT promises not to disappoint patrons seeking to explore new dining venues this summer season on the South Shore.

“After finding success in Rockville Centre we decided to take on a summer time locale,” owner Rob Verderosa said. “We had come up with a concept for a menu using internationally-sourced salts, and after finding a great venue we are bringing the idea to life.”
Like the smoking goblets at Parlay and Mesita’s oft-lauded tableside guacamole, SALT will have its own signature: a raw bar and salts from around the world. The group is mum on other menu details but says to anticipate New American cuisine with an emphasis on seafood and the finest prime meats that have made Mesita and Parlay local dining hotspots. And of course, there will be creative, fresh cocktails made for sipping on the marina deck.
SALT will seat more than 100 guests outdoors on its waterfront decks and offer indoor seating for an additional 50. Expect attention to detail, especially the nautical kind. Manila rope wrapped round the ceiling’s crossbeams compliments the ocean blue hues painted throughout the premises. A simple wooden bar and porthole-styled windows complete the aesthetic. Guests arriving by sea can expect a warm welcome with a sundry of slips to dock at.
