Smoked Beef Brisket and Pulled Chicken Chili

1/2 cup vegetable oil
2 cups diced celery
2 cups diced onion
2 cups diced green bell pepper
2 tbsp crushed garlic
2 tbsp smoked chipotle in adobo
1/2 tbsp ground cumin
4 cups chicken stock
12 oz crushed tomatoes
1 lb dried pinto beans
1 lb dried red kidney beans
1 lb smoked beef brisket, diced
1 lb smoked chicken, pulled
Salt and pepper to taste

Warm the oil in a large Dutch oven or heavy-bottomed pot over medium heat.

Add the celery, onion and bell pepper and sauté 5–8 minutes, sweating until soft. Add garlic, chipotle peppers, cumin, salt and pepper, sauté for another 2–3 minutes. Add the chicken stock, tomatoes and beans and stir thoroughly, bringing to a slow simmer.

Stir in the brisket and chicken and cook uncovered for another 25–30 minutes.
